Crustless Beet Greens Pie


1/4 cup butter

1/2 cup shredded cheddar cheese

3 eggs

1/3 parmesan cheese

1 cup flour

4 cups chopped beet greens
(or other greens such as spinach, swiss chard, collard or mustard greens)

1 cup low fat milk (whole milk can be substituted.)

1 teaspoon garlic powder

1 teaspoon baking powder


Preheat oven to 350 degrees, melt butter or margarine in a 9x13 pan, Beat eggs well, add flour, milk, garlic and baking powders. Add to the 9x13 pan. Stir in cheese and greens. Bake for 35 minutes. Serves 6.
